I'm totally new to this KT stuff and this group (I really like receiving my bundle of daily KT messages...thank you all for your knowledge and generosity!) I received my mama scoby (is that correct??) from organic-kombucha.com (she was quite thick and a creamy color) on Saturday and I followed all the directions and made up my sugar and tea and gently plopped her in the jar after everything cooled. She sank but yesterday (Monday) she started rising. Today she is on the top, but there is *a lot* of foam and brownish black stringy, clumpy globs both on top of the mushroom and on the bottom of the jar. Is this normal? I know that I'm being totally paranoid and obsessive because this is my first batch and I don't want to kill the mushroom and I don't want any mold. Is the strandy stuff the yeast that I've read about? Is all the foam normal? Thanks for answering this newbie's silly questions. I appreciate it! Yes, it all sounds absolutely fine, Ali. :-) It sounds as though brewing activity in your fermentation jar is in happy progress! Scobys often change position, just as you described. If you do not disturb the jar in the next few days until you think it's time to have a taste (not to let the brew get too sour!) there probably will be a new 'baby' culture on the top - by itself if mother has sunk to the bottom, or attached to the mother. Yes, this is part of the oogly phenomenon, a sign that your culture works well in the fermentation process. > Is all the foam normal? There is no such thing as a 'silly question'. Questions are outcrops of an inquisitive mind that likes to stretch forward into new things, as you have done with your Kombucha brewing.
