Guest guest Posted September 14, 2010 Report Share Posted September 14, 2010 Hey Guys? Kefir, like Kombucha is a culture. You cannot get Kefir Milk without the Kefir Grains. There are a couple of really good support groups just like this one, but for Kefir. What you accidentally or intentionally are making, although it sounds yummy, is not Kefir. Milk Kefir Grains are white small cauliflower shaped and change the milk product by consuming the lactose and sugars in the milk. It eats like Kombucha does, and produces an end product similar to buttermilk. Kefir is loaded with Probiotics and if you like buttermilk you will enjoy Kefir Milk. Industrialized buttermilk is not really what anyone on a farm would consider buttermilk anyway. Buttermilk is the end product when making butter. The buttermilk you purchase in a store does not have the same probiotic benefits of Kefir Milk. Just like the saurekraut you purchase which has been pasturized does not have the same benefits as non pasturized home fermented saurekraut. Although they may appear to be " similar " , they are not. It's like comparing apples to oranges. F.Y.I. there is also Water Kefir which is made with water/sugar and the little rice sized grains feed on that and transform it into another end product, much like Kombucha does. It too has lots of probiotics. Your buttermilk sounds like a wonderful drink by the way. Kefir Milk is probably more tart than what you are making and I sure notice the probiotic benefits since making and drinking it. Having said ALL of this?
