Much info in there I had not heard of...such as drying the scoby out in a food dehydrater to mail it easier, & he has no problem refridgerating them. As he lives in Australia he talks about a fellow down there that has " attempted more trials brewing kombucha with herb's than I have ever met. " ( Mr. Perko from The way to Live Sanctuary in Queensland) & lists some 35 herbs that can be used. He also spends alot of time on all the variables that occur ( ciggarette smoke KILLS scobys) & likens the scobys to apple trees , some put out sweet some sour & that there are 1000's of " tastes " for KT. Alot about honey, & the fascinating study by Pastor Weidinger that A cpl. of billion years ago it was a sea algae that moved to shore , & needing a mate they hooked up with mycel funghi & produced the perfect lichen.(scoby) " lichens (1600 of them) revitalize living matter... " also says that too sweet a brew means an non-working scoby...He beleives in letting them get big & fat...also its the carbon dioxide built up in the scoby which keeps it afloat...also about honey being used successfully. What were they using before cane sugar was available ? You will have some Xtra (backup) scobies soon, to brew herbs thru. Brewing with herbs effects the health of your scoby in the long run One needs real tea like Tetley, or others.. (Camellia Sinensis) for maintaining good scoby health.
