The longer you let the tea brew, the thicker the scoby. This is a sign of a

really healthy brew, and nothing to worry about. You can use these scoby's as

they are, just harvest a little sooner next time. If you want to slow the

fermentation, use a little more sugar, it mskes for a more beneficial brew
