Using Camellia Sinensis Tea to make Kombucha

Hi EveryOne,

On this list we have always used the words Kombucha and Kombucha tea to refer to

that which was fermented with the traditional black, oolong, green or white

teas....Camellia Sinensis.

We do so because that is what has been used throughout the world for hundreds of

years and is known to produce certain outcomes and benefits.

It is certainly possible to make a drink using a Kombucha colony and any other

substance. Guenther is his excellent book about Kombucha writes that any

herbs without volatile oils can be used and he mentions raspberry leaf as an

example. However he recommends that regular tea be used most of the time.

Rooibus, Mate, and other commonly used herbal teas have also been used by many

people and a whole book was written by Harald Teitze about using other herbs

such as Papaya leaf and hundreds of others to make " kombucha " .

The reason we reserve the term Kombucha for traditional tea brews is so that the

word Kombucha has some meaning. Otherwise Kombucha made from Mountain Dew could

become mixed up with Kombucha as it has been traditionally used and we could

lose the health benefits of the traditional brew. Kombucha has been passed from

one person to another for hundreds of years and it is still effective because it

has been made in basically the same way.

Anyone is welcome to make their " Kombucha " any way they choose. However, for

this list, and hopefully for sharing with others the traditional way, using

Camellia Sinensis, will be used and encouraged because we know it works!

It is even possible that for certain people or purposes brewing Kombucha with an

herb other than regular tea might work even better but that is unknown. Benno

experimented with various combinations but never shared his actual process or

results here.

Please feel free to experiment all you want with the Kombucha you make and drink

yourself.
