I am going to try making some with a bit of fizz to them. I have read the warnings about the bottles exploding so i am bottling mine in grolsh bottles with the flip tops.As a precaution i will be putting the bottles inside a toy box (with lid) just in case any explode.This way there shouldn't be an danger of exploding glass and i will tap the toy box before opening it just in case moving them causes them to explode. I have used this method for sparkling wines etc for years without a mishap.I just thought i would mention it for extra safety with possible exploding bottles. Correct me if wrong, i am talking about the ones i used, there might be different ) i used what they use for balsamic vinegars,oils ( i like to re-use) and replaced the rubberseals with other organic linings (little inventions i had) at the time, till i tried GT, and since i was not " burping " them, and fizzy results (Vezuvious fizzy ), no shatters..or shards...just sharing that i found a safe system..and these bottles are out there, people just throw them in the recycle bin, since most people do not grow Kombucha.Peace,and Love Jahjet > > I'd bet that Grolsch bottles are at least as strong as GT bottles! I'd love to try month old (or even 3 or 4 month old) kombucha. In your experience what is the best flavor to allow to age? Our favorite by far to drink right away is lemon ginger however strawberry lemonade is a close second. I just opened the strawberry ginger recently and had a cute little explosion of mushed up strawberries flying up towards the ceiling. Scared the dickens out of me!!!! Tamara > > Tamara, I have some that are months old, and I kept wondering on that myself,till now that i have more than what we consum, and it seems it gets better with age, especially in the right bottles. I store most of mine in the frig. .
