I just bought 16 oz bottles with spring-tops, but wouldn't add ginger to those

because I'd be afraid I wouldn't be able to get the pieces out of the

bottles--they have very long necks and small openings, as they're made for

brewing beer. But I can do the second ferment in quart jars. They have metal

lids, but if I don't fill them all the way to the top, they'll be safe for a

second ferment, with a slice of ginger added?
