just saying hi and reporting latest kombucha results

Hello everyone!

I go long periods of time without being able to read the digest, when I do

it is a real feast.

Thank you all for your efforts and contributions

Wanted to report I have successfully brewed 6 gallon bottles at one time for

four weeks on a row now) of our Kombucha " nectar " . Great triumph for me! (

The scobies were successfully cut into pieces to accomplish this) All

well so far, except the scobies are not pretty and thick, and smooth - as I

remember years back. They were, back then, about 1/3 " when they got well

established - usually by the third brew, (thicker later), off-white color

and just in general " beautiful " .

These are thin, " bumpy " and have dark areas on the surface. No mold.

The K-tea is wonderful, LOL with the exception of this last batch which went

13 days -- and ouch - vinegary!!!

My husband and I still consume it daily and are grateful to have it back in

our lives! I should brew only 7 days which seems to be perfect for our

taste.

I store the tea in 2 liter soda bottles and refrigerate them till the next

brew. I noticed that a couple of times when I left about a cupful in one of

the bottles and left it capped outside the fridge. Those, formed the most

perfect half inch momma. smooth, a pretty thing.

How come the ones I have in the gallon glass jars, covered with one layer of

T-shirt material, with a thick rubber band, and in a closed-door kitchen

cabinet (perfect temperature, I think?) form such bumpy, ugly ones????

(shhh.. they'll hear)?????

I wonder if any of you can give me some advice? What am I doing wrong -

perhaps?

Anyway. Thank you to all you Kombucha gurus who are so kind to help us

neophites!
