Sara--actually fruit other than pineapple tends to be lower on the GI than most starches so my suggested tweak would be to include more fruit. It's a funny thing that even though it's sweeter it creates less of an insulin spike than potatoes, sweet potatoes, pasta and most breads. Oatmeal is pretty good. Wheat and potatoes tend to be worse than fruit, other unprocessed whole grains, beans and lentils and yogurt/dairy. Unrelated, oat bran is better for fiber and colon health than wheat bran. :=) Kit
