Glass is not the only acceptable material for fermenting. However, " stainless steel " is a broad term, as different amounts of chromium and nickel (and sometimes molybdenum) can be mixed with iron, and cold-working affects the hardness of the resulting alloy. In other words, some stainless steel is harder and has much better corrosion resistance than other stainless steel. That's not to say stainless steel is safe or unsafe, but without knowing the composition I certainly wouldn't use such a pot for fermentation.
