Guest guest
Hi all! I tried starting my scoby from a bottle of GTS. I steeped my tea, added sugar, cooled it down and added my full bottle (minus a sip, that I poured into a separate cup), covered with a coffee filter and have let it set for about 4 weeks on top of my freezer. After the first couple of weeks, nothing was happening, and I thought that perhaps the jiggle it got when opening and closing the door made it very unhappy. Just out of curiosity, I left it there. Now after about 4 weeks, I see a couple of little stringy things from the bottle of GTS that I dumped in. The tea is really dark, but there is a defined layer of something white at the very bottom of the jar. Is that my scoby? When I lifted my jar down today to get a good look in there, it now has a layer of bubbles on top and has a strong vinegar odor. Does that mean that it is ready? How do I find out if that is indeed a scoby on the bottom? Do I stick my hand down in there and feel it? Thanks for the help, Candi Ps. Also, the sip of the GTS was my only experience with Kombucha, and I have to say, that I really didn't like it. Will home brewed have a different taste to it? Is it an acquired taste?
