I am using a bottle of GT's Kombucha, original flavor, and the bottle had a small Scoby already beginning to form in it. I prepared my sweet tea according to the normal preparations on recipes I have found everywhere on the web. Today my brew is definitely doing something exciting. I can smell the yeast in it and I have bubbles along the top rim of the liquid. The funny part is that in the upper middle of the brew there are these small lighter brown bits forming and they are falling slowly, like a " shower " down to the bottom where they are collecting. Is this normal? Something tells me that this is a good sign but since I have never done this before I have no idea in actuality. So is this good? Thanks! Is this normal? April, This sounds good, as you say, like yeasts multiplying and working within your brew. You want to leave your brew undisturbed for several days now, if you want the bacteria to build you a new scoby on top. When it starts smelling acidic is the time to carefully try your brew. Right now the brew is smelling quite good. Only a few hours earlier it just had a yeasty smell, but now it is smelling better! Almost like a sweet wine/beer combo. It smells like KT from GT minus the vinegar smell that is mixed with it. This is so exciting that it is actually working! So when it starts smelling acidic does that smell more vinegary? Like the GT kind? (That's the only kind I have experience with.) When I bought the original version of GT's I had never tasted that kind before. I always got the Grape as it was my favorite. I had never seen the original flavor before now so I poured out a tiny swig of it into a small cup before mixing the rest in the big KT brew. I was surprised at how good it tasted! I liked it even more than the grape version, so I am very curious as to how my homebrew will taste. I'm very excited to try it! Thanks again!
