Guest guest Posted November 1, 2010 Report Share Posted November 1, 2010 Hello all, I am brewing my second batch ever. The first one I made was in a glass one gallon jar. It was perfect and had a ¼ inch nice thick white layer at the top of the jar. I am now brewing a second batch and using 2 – 1 gallon jars. I cut the white layer from the first brew in half and put it in each jar along with about 2 cups of starter and the scobys. Two questions: is that thick while layer called the scoby or is all the other thick floating stuff in the jar called the scoby? But the more important question: that thick layer at the top is barely forming in this new batch and my brew will be done in a few days (10 days total); any ideas what I may have done wrong?
