Hi, Mari, No, Kombucha must not necessarily be brewed in glass. You seem to have a treasure there : A clear glazed porcelain jar ... The fact that it has a spigot, points to a previous use for brewing. Is it easy to reach into? I should only use it if it has a wide enough neck to reach in for cleaning and removing/adding scobys. This sounds like the ideal vessel for continuous brewing. Porcelain is very hard and non-porous, non-reactive and should be ideal for brewing. Let us know how you are getting on, Mari, kombuchalissimi, Margret:-) -- +------------------ Minstrel@... --------------------+ http://www.therpc.f9.co.uk/family/scobygrow/home.html http://bavarianminstrel.wordpress.com creation.com " As a former fetus I am opposed to abortion.
