hi, linda..i do the same as you,sometimes when i feel brew is ready sooner i

syphon out the needed portion,without disturbing scobies,and add sweet tea early

a smaller portion just to replace what i took out.i guess it's hybrid between CB

and traditinal brewing.. I brew nearing 10 gallon a week,big family. I charm

them with my KT hehe. I get to see them more often this way..my treat.It is

keeping all of them balanced what keeps me busy..LOL..I am almost deaf, but i

can hear them!! They whisper,sigh..and scream sometimes!!Just like
