Now see, I totally disagree with . I seal mine all the time,

and don't have any issues. Those " gasses " --> AKA carbon dioxide.

(Which also exists often in non-sealed kombucha.)

Just IMHO.

And , please do post the link re. the Russian ladies! :-)

book. I am very glad that I have not wasted my time reading it!

Kombucha is not some weird kind of drug or hallucinogenic 'mushroom',

but a wonderful symbiotic culture of bacteria and yeasts specific to

Kombucha. There are many other similar cultures in very large fermentation

land - all of them healthy and good nourishment consumed with a bit of

common sense..

Kombucha has been our house drink for nigh unto 30 years and has only

been good for us and the people we've share it with

That is their weird opinion. My 6 children and I when pregnant have

always enjoyed the wonderous Tea Elixir.

More recently we have also added Kefir to the probiotic diet and must

state that the two drinks are brilliant and keep (amongst other things)

our gut very well funtioning!

Well I am old enough to supervise myself ;-) and drink well beyond 8 oz,

and so does my husband! :-)

My KT never sees a fridge! It is bottled in sealed bottles and kept at room

temperature for a while and then put into a cold pantry.

I have NEVER had an abnormality with my KT!

Yes, it will, if consumed very acidic, with the sugar all consumed by

the culture during the fermentation process.

with the paranoia of those guys. Just because somebody publishes things

in a book, does not make those things true. In fact, there are lots more

untruths published than truths....

Ah, some sensible comment at last! ;-) If you want to know what I think

about soda (I think, we call it pop in the UK): YUK! There are few things

that are worse to drink than that rubbish! Diet soda is particularly

pernicious with all the artificial sweet chemical rubbish in it- otherwise,

with sugar, which is bad for overweight and especially yeast infection.

I so hope you will see the light, cast of unreasonable fear and just

ENJOY your Kombucha, which you and your family do anyway. Don't let

certain spoilsports dampen your enjoyment of the very healthy and

exceedingly lovely Kombucha Elixir.

of mine, you inspired the rebel in me ! i have been experimenting with this

stuff for nearing three decades,/ so has your mom,those guys are probably

hello, Diane!cork it,the worst can happen is that it will push the cork out, and

you loose some precious KT. Sometimes, after i cork it I seal with ceram

wrap,and rubberband, if there are bubbles escaping, it will blow up a little

ballon / from ceram wrap/. This i popp, and drink my KT !! Blessings. jahjet/

usually i use Gt bottles caps are built in for a slight releise of pressures/

Peace.. Jahjet

Hello, .changing the subject. tonite i made a raw blender soup, with KT

verysour KT,red cabbage, red beets,garlic and celery root juice, i made

earler..with fresly made Essene bread, it was just behumblingly good..FAITHFULLY

,HOPEFULLY..PRAYING.. JAHJET THANK YOU LESLIE!!

People are quick to dismiss, or even deride, anything which is unusual. This

This is ridiculous, it's one of the same (wrong) arguments used against low-carb

diets. Ketones are a *normal* part of our biochemistry, and are simply *not* a

concern. People who claim ketones are dangerous are confusing a *normal* body

function with ketoacidosis, an *abnormal* condition in diabetics and alcoholics.

Fructose is a ketone. Do these authors claim fruits and vegetables damage the

kidneys?

I wonder what these authors would say about exercise? After all, it damages the

muscles!

When did sugars (Carbohydrates) become Alkanones (Ketones)?

Part rusty memory and part " digging around " yielded ...

" The general formula for sugars is (CH2O) n — that is, carbon combined with

water multiplied n times — indicating the derivation of the word

‘carbohydrate’. "

Fructose is sometimes referred to as fruit sugar.

The scientific formula for Fructose is C6H12O6

For Sucrose C12H22O11

General formula for Ketones...

Acetone (2-propanone, propanone, or other names) has CH3COCH3 as its chemical

formula.

Monosaccharides are aldehydes or ketones with multiple hydroxyl groups. Fructose

and glucose share the same chemical formula, but differ in structure - isomers.

Glucose is classified as an aldehyde while fructose is classified as a ketone,

since its carbonyl group has two hydrocarbon groups attached.

My brain is shaped in such a way that chemical formulae almost immediately

slip out again ... kind of chemical form of dyslexia?

.... except for nice and short H2O ... of which we use plenty for brewing! ;-)

Hello and thank you everyone for your many helpful replies.

I'm glad to be a part of this group. Otherwise I may have been deterred by that

book. The book says that Alana Pascal is a Certified Clinical Nutiritionist

with a strong background in biochemistry and 23 years of experience in the

alternative health field. Lynne Van der Kar is a certified massage therapist.

I admit that while reading it, I was guilty of leaning toward the false

assumption that because it was in a book, it was true. However, this book was

published in 1995. I think a lot more research and documentation has been done

since then. While reading your replies and catching up on all the other

wonderful posts, I read some of the FAQ's that Bev linked to. I found the

following to be of particular interest and relevance:

physiology. While our initial impressions are that they are very favorable to

the human body, that is also an observation on probable interaction with a

healthy adult. "

6.23 Should lactating women drink Kombucha Tea?

Since lactating mothers pass on substances through the breast milk to their

infants, most people feel that it would be a good idea to wait until the child

is finished breast-feeding before starting to drink Kombucha Tea. However,

whether or not to drink Kombucha while breast-feeding, has to remain a personal

decision for the mother to make. Remember, that the caffeine is not used by the

colony while fermenting, and remains in the finished Kombucha Tea.

6.49 Can Kombucha Tea cause poisoning and allergic reactions?

Nothing has been substantiated on any poisoning by Kombucha Tea. Allergic

reactions are rare, however, not impossible, since Kombucha is a food.

6.82 Should I drink Kombucha Tea on an empty stomach?

Concerning when to take the first drink of Kombucha. It is recommended that the

first Kombucha be taken first thing in the morning on an empty stomach. The

purpose is for the Kombucha Tea to move into the body quickly with out the

hindrance of food and digestive juices. However, not everybody's stomach is the

same. Some people insist that the acidic Kombucha Tea upsets their stomach when

consumed on an empty tummy. It is suggested that they eat something first or

take their Kombucha Tea with food. That is better than not taking it at all. If

one takes the tea during the day under a variety of situations then they may get

different effects and benefits when the tea hits the stomach with varying kinds

and amounts of food in the stomach. I have always drunk my k-tea first thing in

the morning so that it moves into the blood stream quickly and unhindered. It

also passes quickly in the liver and kidneys and probably is more efficient then

when competing with a lot of other waste products. Also, if one wants to use

k-tea as an appetite suppressant then it should be taken around 30 minutes

before a meal. This allows it to pass through the stomach and exert it effects

on the appetite.

I try not to take the Kombucha Tea and vitamins or supplements at the same time

because I want to get maximum benefit of both. I don't want the Kombucha Tea

possibly tying up beneficial parts of the supplements or vitamins and minerals.

Good point Margaret,

Now that you mention it, I have noticed that sometimes I feel like drinking KT

less than other times. Then there are other times when I feel like chugging it

down. I suppose that could be my body reacting to it's need for KT. Moderation

is key, right?
