Guest guest Posted January 13, 2010 Report Share Posted January 13, 2010 Hi all, I'm new here and I have some questions. I've been brewing kombucha for about 2-3 months with great success. I've been using the continuous brew method in a 2.5 gallon glass decanter with a spigot in the bottom. I add a gallon of tea every two weeks or 10 days since I love kombucha and what its done for my health. At this point my scoby is at least 1 foot across and an inch deep. The last batch I made got very vinegarey in less than a week. Should I be removing some of the scoby every time I add the next batch? it would seem to me that it would get enormous eventually and fill up the whole container. Guest guest Posted January 14, 2010 Report Share Posted January 14, 2010 LOL. You are describing my kombucha CB jar... And at the moment my SCOBY *is* huge! And yes, it will eventually take up so much space that you have less kombucha than you want. You do not need to take out some of the SCOBY everytime you add tea. However, you prob should clean the jar every 4 months or so (be sure to clean the spigot, too), and this is a good time to whack down the SCOBY to size. (Just use a clean knife, pizza wheel, kitchen scissors, whatever.) HTH, Vicki in Orlando P.S.
