Just keep the mother and babies together for now and spin off a new batch when your original is sour (acidic enough to inoculate a new batch of sweet tea). No need to rescue any of what is growing. However, if mold is ever growing then it needs to all be tossed. Keep your babies in with the mother until they are thicker - then use baby it to make a new batch. Whenever I make a new batch using a small baby (in the beginning) I would make a half batch. The first and second batch never taste very good in comparison to the 3rd and subsequent batches. It takes some time for the baby to get the hang of it ;-) The first 2 batches are drinkable, though. But making a half batch allows for less of substandard (in taste and strength) KT to drink. I am still unsure as to whather or not the scoby always makes a new one, and which I should do what with.... Guest guest Posted April 27, 2010 Report Share Posted April 27, 2010 Janine Slow down, the " thinggies " that make up Kombucha, are both in the liquid AND the SCOBY. The SCOBY is just a mat made up by the bacteria .. They surely inhabit it, as well as some yeasts but the same bacteria and yeast are also in the liquid, the same one you drink .. So You can use the old SCOBY or the newly formed if you find it substantial or a chunk of it or a mixture of the old SCOBY with the new one or a chunk of the old with all the new one or .. I think yo get my point .. All you need to be sure of, is to reserve about 20% of the newly brewed KT for starter or add two tablespoon of Distilled White Vinegar if you don't have a starter.. You need the acidity to starve off the dreaded mold, mold equal to not enough acidity ... and you need the initial bugt of your KT to do its thing Later when you get more experienced you will find out you can brew perfectly good KT without a SCOBY, only with brewed KT. I have the feeling that there is a higher concentration of bacteria in the SCOBY than in the liquid.. I have been eating parts of my young SCOBY for a while now ... Guest guest Posted April 27, 2010 Report Share Posted April 27, 2010 ...yes i agree, i just cleaned out my car and found a lunch sack, it must have been in there over a couple of months, behind the seat, thinking it was empty, i just bought it up, an it had a ziplock in it well as i took the ziplock out it had a huge fat scoby (like an xtra lg burrito)all rolled up growing in it, i usually carry my KT in a plastic bag to catch overflow..so that must have grown in there from just a half a cup, or less of liquid..when examened closer, though it had little worms in it already, interesting, i never seen that before either but in pictures, that scoby got quicly disposed of ..well i shared a peek of it with my neighbor, sister brewer before it was safely tossed. This proves how strong a Kombucha brew is + the element of time under such conditions as that, cold wintermonths, no sweet tea added..Cheers! Do you mix them with anything or eat them by themselves? Do you eat older ones, or brand new ones? I am getting so many now, and eating them might be an option. I didn't know you could eat scobies, and in fact thought I read some where not to? I am a recent convert myself, istill think of them as sacred food, this was a real natural instinct at play. i hardly had to chew it was kind of tender, like marinated artichoke like. I was thinking i could just garnish with pickled ginger and eat sushilike, or add straberries, and mango, at in in fruit salad, i still have not used a knife or scissors on mine, it will take me time to do that but at this point i just rolled it up, and down the hatch..and it was good i felt like a bird swooping down for food, and as i said shocked myself.. my older scobies are more fibrous, an they do not appeal to me. I am sure we will come up with recepies, but they are good just the way they are , especially, when you have not eaten for a while..your body knows what it needs. I have many jars going right now; a 1 gal, a 1/2 gal, 1 large glass pitcher, 3 qt. jars and 1 octagon hotel that are all growing more scobies. Won't be long and I will soon be over run!
