Hi EveryOne,

On this list we have always used the words Kombucha and Kombucha tea to refer to

that which was fermented with the traditional black, oolong, green or white

teas....Camellia Sinensis.

We do so because that is what has been used throughout the world for hundreds of

years and is known to produce certain outcomes and benefits.

It is certainly possible to make a drink using a Kombucha colony and any other

substance. Guenther is his excellent book about Kombucha writes that any

herbs without volatile oils can be used and he mentions raspberry leaf as an

example. However he recommends that regular tea be used most of the time.

Rooibus, Mate, and other commonly used herbal teas have also been used by many

people and a whole book was written by Harald Teitze about using other herbs

such as Papaya leaf and hundreds of others to make " kombucha " .

The reason we reserve the term Kombucha for traditional tea brews is so that the

word Kombucha has some meaning. Otherwise Kombucha made from Mountain Dew could

become mixed up with Kombucha as it has been traditionally used and we could

lose the health benefits of the traditional brew. Kombucha has been passed from

one person to another for hundreds of years and it is still effective because it

has been made in basically the same way.

Anyone is welcome to make their " Kombucha " any way they choose. However, for

this list, and hopefully for sharing with others the traditional way, using

Camellia Sinensis, will be used and encouraged because we know it works!

It is even possible that for certain people or purposes brewing Kombucha with an

herb other than regular tea might work even better but that is unknown. Benno

experimented with various combinations but never shared his actual process or

results here.

Please feel free to experiment all you want with the Kombucha you make and drink

yourself.

I read somewhere that you can make Kombucha with Rooibos as well as White

Tea.

I am new on the list, discovered Kombucha Tea only recently (6 months or so)

been doing a lot of research about making KT at home. I have diabetes so my

biggest concern is the sugar but I understand that after fermentation sugar

convert to (I forgot what it was) so even those with diabetes can drink and

enjoy KT. I am addicted to it (I love carbonated drinks) and KT is a

wonderful replacement to those sugary sodas!

They are so expensive that I decided to make my own. I started my 1st (and

2nd)SCOBY starter Feb 8 with Oolong Tea, 3rd starter Feb 15 with Oolong Tea,

4th starter Feb 21st with White Tea and then gave in and adopted a SCOBY

from a friend because I couldn't wait few more weeks till mine would be

ready to drink, and I have that brewing now for 3 days with Oolong Tea in

2.5 gal jar with spigot (not metal). All are doing extremely well.

Ironically the White Tea developed beautiful SCOBY colony with tentacles the

fastest.

Wow! I beg to differ.

I've gotten plenty of benefits from my KT, including but not limited to a

dramatic reduction in candida problems. I agree that Rooibos is not really a

traditional tea like black, oolong or green but it certainly makes a

delicious, effective KT. So does hibiscus, lavender and camomile which is my

favorite blend. My SCOBY is healthy and reproduces a fizzy, acidic KT at a

nice clip.

If you're going to put a statement out like the one below please be prepared

to back it up with FACTS and where you got it from, not OPINION.

...white tea is the lowest in caffein,highest in antioxidants, i drink white.

It's Camellia sinensis, early buds, sweeter too.(but for KT green) Sparkly..i

like flavor. White is pricey, for as much KT i brew.

Hi Group , I would like to thank everyone for all the input into Rooibos

i don.t know witch way i.m going to go i have been drinking G T Daves and it

does not seem to make me jittery like coffee used to. I will probably use

white tea and green together just to get the Kombucha train going and

experiment with the Rooibos Everyone Be Well Ted

Interesting - when I went to China for tea shopping holiday last Easter, the

Chinese were trying to get rid of their White tea stock by giving me lots free

of charge but I declined - No many Orientals will touch white tea unless they

have sore throat/cough. These are really cheap if you get them in the Far East

as there are no demand for them (hence low price and giving it for free). Other

more delicious and pricey tea like Oolong & Pu-erh are expensive. Pu-erh are

collectibles and great value to health, as the Emperor of China in the past only

drinks the matured and slowly fermented Pu-erh, aged 50 years, until they

changed from black to golden leaves. They tastes wonderful with excellent health

benefits.

However, all things in moderation. So when drink white tea, ensure the balance

of yin and yang is achieved as there are reasons why the Chinese people

themselves only drink white tea when having sore throat/cough. It is clever

marketing and high margin of profit ie. buy cheap and sell/market it as

exclusive high end product in the Western market with clever advertising and

packaging. I was even warned not to overdo white tea by experts. Well, at least

this is my humble experience whilst in China & Far East - if in doubt, check out

what the locals are doing - if they avoid it, there are good reasons. I use the

same principles as when going to good Chinese restaurant - if most Chinese

people frequent/eat there, it is a sure winner!

Hmm..many recent studies ( in top universities) show all signs of superiorities

of White Teas, ( White Pu-erh eg.) besides, it is the same tea, but picked with

more care,early,so buds are not broken, containing more of Everything that is

benefical to us read about White Tea @ Wikipedia. Love it! Jahjet
