If you brew just with Rooibos, you will not have Kombucha any more but KombuROO and lacking the specific Camellia sinensis nutrients that are making Kombucha viable long term. There is no consensus about whether caffeine gets used up in the fermentation process or not. Personally I don't care. There have been caffeine sensitive people on this list who have successfully brewed and drunk Kombucha with proper tea without any bad effect. Tea in itself has great medicinal value and the small amount of caffeine in it should be beneficial together with all the other good ingredients you imbibe especially with green/white tea, which are lowest in caffeine. Guest guest
Wow! I beg to differ. I've gotten plenty of benefits from my KT, including but not limited to a dramatic reduction in candida problems. I agree that Rooibos is not really a traditional tea like black, oolong or green but it certainly makes a delicious, effective KT. So does hibiscus, lavender and camomile which is my favorite blend. My SCOBY is healthy and reproduces a fizzy, acidic KT at a nice clip. If you're going to put a statement out like the one below please be prepared to back it up with FACTS and where you got it from, not OPINION. to get benefits of Kombucha you need to use green or black tea, well tea, rooibos is not a tea WHAT A FRIEND WE HAVE IN JESUS Dianna Holland

Guest guest
Thanks Margret for your response. Can't we just agree to disagree? I've had the opposite experience. Maybe I'll try it with a decaf " real " tea just to see the difference. > > > yes yu can use with other teas, but not alone > > Yes, the general choir of voices I have heard on the web sing > Dianna's tune : You gotta have some real tea with the brew. > > If you brew just with Rooibos, you will not have > Kombucha any more but KombuROO and lacking the specific Camellia > sinensis nutrients that are making Kombucha viable long term. > > There is no consensus about whether caffeine gets used up in the > fermentation process or not. Guest guest
I've been brewing with a healthy reproducing SCOBY with non-teas for going on a year. I can't imagine its a fluke. I read in the book " Wild Fermentation " that KT can be made from almost any sweetened waterbased drink not just " real " teas. Even Mountain Dew (yuck!) > >
