It is quite comprehensive and easy to follow. I do have some question regarding sugar. 1. Wouldn't it be easier to add the sugar once the water has boiled? That way you do not have to stir it constantly. I would imagine that sugar would burn? 2. You even suggest to go past the boiling point, if necessary, to disinfect the water. You can add the sugar after the water boils but some people have said that doing so causes a reaction and that they got burned doing it that way. I have never tried it so can't say for sure. Guest guest Posted September 11, 2010 Report Share Posted September 11, 2010 I put the sugar in my extra gallon jar I use for the brewing, and then pour the boiling water over that. Works great because the heat of the water dissolves the sugar quickly, and by pouring the water over the sugar (rather than the sugar into the water), I don't get any boil-up reaction. :-D Velma kombucha tea From: OM@...
