Hi Bev,

Thank you for your recipe. It is quite comprehensive and easy to follow.

I do have some question regarding sugar.

1. Wouldn't it be easier to add the sugar once the water has boiled? That way

you do not have to stir it constantly. I would imagine that sugar would burn?

2. You even suggest to go past the boiling point, if necessary, to disinfect the

water. Once again I think that it would be easier to boil the water first (with

nothing in it) for 5 minutes and then add sugar and tea

Hi Alina,

First you only need to boil the water for a longer time if your water is not

safe for drinking without boiling.

You can add the sugar after the water boils but some people have said that doing

so causes a reaction and that they got burned doing it that way. I have never

tried it so can't say for sure.

I put the sugar in my extra gallon jar I use for the brewing, and then pour the

boiling water over that. Works great because the heat of the water dissolves

the sugar quickly, and by pouring the water over the sugar (rather than the

sugar into the water), I don't get any boil-up reaction. :-D

FWIW, I have always added my sugar after boiling, when I add the tea.  Never had

a problem with it. :)
