I don't believe it is as starchy as the white. Potatoes are pure sugar as my doctor once told me. I think what you need to realize is the bigger the potato, the more starch/sugar it has. I, personally, cannot eat a baked potato, mashed potatoes, or even french fries. It does major stuff to my gut. I can enjoy little red potatoes or fingerlings. The smaller, the better. Sweet potato is not even related to a potato and is full of beta carotene. They can be used whole (cook them in crockpot, easy), chipped, or stir fried. I stirfry everything in coconut oil.
