I usually mix about 2 egg whites for every whole egg, and I use a blender or mixer, and whip them up into a froth, and scramble them. You can also make omlets with veggies. Looks and tastes just like whole egg omlets (to me, anyway!) Just be sure to add spice like tabasco, fresh ground pepper, green onion, salsa -whatever strikes your fancy. I happen to love salsa or pico de gallo on mine. Since I had gastroplasty, I love spicy! In fact, I eat only the best food - no crap. If I'm going to have only 3 ounces of food at a time, its going to be the best. So, I eat lots of seafood (steamed with lemon is great). Invest in one of those chopper-type food processors, and you can make great meals. I chop up shrimp with low-fat mayonaise, celery, green onion, and spoon it onto a big piece of romaine - yummy. Just chop everything separately, and then mix. Much better texture. You can also have Kavli Rye Krisp type crackers with it.
