The one I received was too large, so I crossed my fingers and cut it, as

I was not sure if that would " hurt " it. But it is not one large living

being, but a group of them - think of a cake of yeast (do they sell

those any more? Of course, I remember my mother using those, not me.

LOL). You could crumble that up and use as much as you needed and it

did not affect the action of the yeast. I wouldn't " crumble " my scoby,

but I did cut it. That was a couple of months ago. It has been going

strong ever since.
