Hi and EveryOne,

In terms of Kombucha tea, the colony is a byproduct but the colony itself is

also very useful. To make good Kombucha it is best to have both the Kombucha

colonies and good Kombucha tea as starter.

In addition, the Kombucha Colonies can be used for many things including making

Kombucha Drops which I do. They are much more portable than the KT, convenient

to take with you on trips or to the office and it seems to me they are even

better for supporting the immune system than the tea. Some people have used the

Kombucha drops to lower blood sugar in diabetics and others to treat warts or

skin infections or grow hair......the Kombucha colonies can even be dried and

used as drum heads, to make " leather " goods and dog chews. Blended they make a

fine face cream.

Hardly just a waste byproduct!:-))

This hasn't been my experience. As long as I use enough starter, the resultant

KT doesn't taste different or brew faster whether I use a SCOBY or not, nor does

the formation of the new SCOBY seem affected. I do agree, however, in that it is

a best practice to use it in that it seems to help protect the culture until the

ph drops enough to discourage mold and other contamination. Being mostly KT

itself, it just adds that much more starter to the mix.
