Don't know whether anyone mentioned it yet or not, but you should not worry about your initial experiences in drinking commercial Kombucha. I know that folks on the list have explained the " detox " effect, and that if you experience such issues, you should lessen the amount that you drink, until you no longer experience that type of discomfort. Cathe, and others have explained that while the " ooglies " (spent yeast) in the brew are beneficial, you can certainly strain them out, and still be drinking a very healthy brew. What I have NOT seen mentioned yet (tho' I'm behind on my reading, and am still catching up on list traffic), is the fact that most commercial brews are *substantially* stronger -- and often more carbonated -- than the Kombucha tea (KT) that you will make at home. (There are a LOT of variables, so don't want to overwhelm you all at once with TMI.) The three main commercial brands in central Florida (at least where I shop) seem to be GT's, High Country, and Kombucha Wonder Drink. I swear, if I had tried HC before I got into brewing, I would *never* drink KT again!!! Yikes, it's WAY strong... GT's is fairly strong, and sometimes very carbonated. (BTW, their " Synergy " line is just KT mixed w/ fruit juice.) KWD is milder than both of those other brands, IMHO. But my favorite -- when I haven't screwed up my batch -- is MY Kombucha!
