Sugarcane was probably not available during that time. " China soon established its first sugarcane cultivation in the seventh century. " So what was the original sweetener used in kombucha? Lets imagine how the first kombucha was made... Yi makes her daily tea and adds some honey to sweeten it. She leaves it on the table and forgets about it. A week later she discovers it has a mushroom-like fungus growing on the top. This is probably how the first kombucha was made, by accident. If honey wasnt used then what was?
