The Bucha is my domain and is in the works as we speak. Knowing what was necessary to make the Elderberry Syrup for coughs and colds I took that information and carried it over to the KT. The berries must be boiled for a time with the sugar in order to bring out the medicinal qualities So that is what I did. Im also adding some white tea to the brew just to keep it legitimate without adding too much flavor or color. It is cooling now and only made enuf for a 1/2 gallon jar- this is just a test. If it works will be making lots more. Once it cools will add more water and the Scoby. There is a very old old recipe for Kombucha floating around somewhere that used nothing but elderberries and honey.
