Most commercial crocks with spigots have them placed towards the

bottom so that the spigot barely clears the table, then you have to

hang the spigot over the edge in order to use it.

Take a look at Gayles pics of her set up in the files section. She

set hers up higher and I think if I get the opportunity will do the

same. This allows you to not draw up all the yeastie bits that

settle to the bottom and a small glass can be set under without

hanging over the edge. Just makes more sense to me for Kombucha anyways.

Hi ,

I would drill it about one inch from the bottom. This way you don't get all the

dead yeast that settles at the bottom when you decant.
