Marta! You need an education...so here goes. There are two types of

persimmons typically seen around here (I may start showing how much I DON'T know

any

minute now...lol). There are the small flat ones and the larger more triangular

shaped ones -- both are orange (one of them is called Japanese...I think the

small ones). They ripen on the tree after a heavy frost...they are the orange

fruit you see hanging on trees without leaves near the holidays! They make

wonderful breads and cookies (dang, and I can't find my recipe, either). You

use the puree of the fruit (like pumpkin, only wetter) to make the cookies and

the cookies are moist and delicious.

I hope this is helpful...your local stores HAVE to have persimmons (or you

can go heist them off of a tree that no one harvested)! You can freeze the pulp

or use it right away.
