I am not quite ready for a scoby yet - have not obtained my equipment and set-up yet - but would like to get with you at a future date to pick one up. With regard to getting my equipment since I haven't started yet, any advice you have is welcome. For example is a one gallon jug big enough for brewing for myself and my husband? Is it true you need to avoid all metal for things like strainers? I am still a little confused about the secondary fermentation - head space or no head space in the bottles. What is your advice? We will probably want to sweeten with juice as we are still trying to adapt to the taste. Any suggestions on good brands of tea that I can buy locally that work really well? Sorry to bug you with questions. If you don't have time to answer - I will not be offended and totally understand. We weren't especially impressed with any of the newer flavors, but they weren't bad. At first I thought that my taste buds had acclimated to my home brew, but today I purchased my favorite GT, Gingerberry, and it was just as good as ever. Also, not sure why, but the newer flavors hardly had any fizz.
