hey Blue Goose,

I dont even wait that long when I need a jar!!

I take the pickles out and repack them into quart canning jars, add a few

more spices, 

cover with enough of the liquid, write the " start date and 2 week finish date "

on a piece of masking tape, seal the jars and store them in the refrigerater.

IF I can keep my family out of them, the pickles are ready to eat in 2 weeks and

I have my jar already in use for kombucha.

When I was aquiring jars, I would buy the pickle one gallon jars empty the

contents into 4 equal portions and give out the pickles to family, friends and

colleages. I have about 15 gallon containers and I never ate one of the pickles.

Another idea -- one that I used successfully -- is to contact a local

restaurant and ask about getting a few large jars. They always buy

items like pickles, olives, etc. in bulk, and restaurants are often

more than happy that they have less glass to get rid of by giving you

some jars.
