As a general rule (Is there such a thing) Mum SCOBY does her own thing

and can sink, float, achieve 0 buoyancy, pirouette, whatever takes her

fancy but baby forms on top. If it's well formed, I used to gently tilt

mine to release trapped gases if it threatened an escape by air ;-) But

you *do* run a slight risk of it sinking.

the happy herbalist says to pop those bubbles, because the air keeps the scoby

out of contact with the brew and it will die. dont know for sure if this is

true, but i pop them, and burp them if a bubble forms underneath

My GT's scoby is on it's second batch - yum..yum!!!!

My scoby is a floater for sure. It has a very large air sack that has

almost filled the whole top of my gallon jar. Will this make it sink

if I put a slice in it ? or should I just leave it alone ?

The top isn't slimy at all - like paper on the top/dry..

I have a couple of " climbers " - there is so much gas built up under

them that they lift up out of the tea. I figure that they can't do

their job if they aren't in contact with the brew, so I use a wooden

chop stick and push gently on one side to let the air out. I haven't

sunk any yet this way ... in fact, I often have to " burp " them again

in a day or tow. But even if they do sink, it's okay.
