Thought I'd pass this on. One website said Jimmy s had an unwich ( low

carb sandwich). We ate there to see what it was. They take meat, cheese,

veggies and roll it in large lettuce leaves with mayo or mustard, then wrap

it in parchment paper. We had the Hunter, which is about 1/4 pound of roast

beef, provolone cheese, tomato, mayo. It tasted really good. Makes you

realize all the taste is in the meat/veggies. The bread is filler. You can

also fry some green peppers and onion in coconut oil, add tender roast beef

and top with swiss for a Philly cheesesteak taste.

Next we went to the coop for parchment paper. Now we make our own at home

and even better. Grass fed meats, cheese wrapped as an unwich. The

parchment paper holds the unwich together. It's fast and easy for lunch. I

often add 1/2 avocado to get enough fat.

The books and my doc say to be sure and drink two cups of broth daily on

this diet. Low carb makes you pee a lot and you will get light headed, go

low sodium. Increase sea salt and use bone broth. I have taken to making

bone broth in a crock pot, so it's always warm and available. We drink it

in the morning like coffee. Cup in the evening is relaxing. I put a small

roast ( like a chuck roast) in with the bones and vinegar. When the roast

is falling apart tender, take it out for unwiches. As we drink down the

broth, I add more water. I keep it going for about a week, then start a

fresh batch.
