If you're familiar with the chain, their Penne sauce IMO is wonderful, here

is a raw version modified by Yours Truly. The cooked version is available at a

link below. I took a little liberty with the recipe, but I just made a rough

version of it and it was great with hash browns, awesome on penne if you can

handle grains. Or on top of zucchini noodles, or just as marinade for meat. This

sauce is seriously layered with flavor. All the different ingredients come

together like heaven! The result is a synergy of the cream, butter, garlic,

tomato, pepper, and mushroom

Pene a la Cruda

1/4 cup of fresh, organic, sunripe tomatoes, robusto, pureed

Spring onions, sliced paper thin

2 cloves fresh garlic, chopped

Crushed Organic chili flakes to taste

1/4 cup Organic button mushrooms soaked in water

2 Tbsp Raw Grassfed cream

Stone pressed Organic Olive oil

Organic Balsamic

Redmond's Real Salt to taste

1 bunch fresh Organic Sweet Italian basil leaves, minced

3-10 spears of fresh wild asparagus or thin spears (tender, younger shoots)

minced

Shaved, Raw, aged hard cheese, similar to asiago/parmesan

Chop garlic, slice the onions and mushrooms, de-stem basil, mince and set aside.

Drizzle olive oil and balsamic on asparagus. Toss well.

Warm in double boiler or in wide mouthed container placed 100F water. Add the

olive oil, garlic, mushrooms and spring onions. Stir well. Add tomato puree,

salt, crushed chile flakes and fresh sliced basil. Garnish with asparagus and

shaved cheese.
