Everything is all natural, no MSG, nitrites, or any other chemicals. This boar is from my pastured piggery at the organic Castle Rock Creamery and he was at Winona Farms for the winter. Everything is USDA processed and shrink-wrapped then quick-frozen. It's all from last week, so it's very fresh and quite usual. The fact that this is a boar, gives it a bit more flavor and texture, but there are no off-tastes or flavors, just better (Think European) meat. Unlike my other pork this is not quite as fatty, the brats grill up better (no flare-ups) and the bacon is about 75% red meat-25% white fat. I've never made boar bacon before but I love it. Definitely chewier (so don't blame me if you over-fry it!) but I think it's better than the softer stuff because of the flavor and fat ratio! No cure at all, just seasalt, a touch of brown sugar and hickory smoke. I want to sell everything this weekend, so I've chosen to sell it all for about the same prices you'd pay for toxic factory-farm meat at the supermarket!
