Lots and lots of them, all from Award-Winning Offal Chef BECCA GRIFFITH who has been rendering large quantities of the snow white lard from my Winona Pastured Pigs. If we were in the South, people would be fighting over these crunchy lardy snacks but I'm exploring recipes that everyone likes. I'm hoping for more suggestions and recipes to try. Since they are so good, and so TRADITIONAL, I'm willing to be pretty bold in my explorations. Calling Zimmern! Incidentally, the fresh lard is available by the quart for $8 each (also found on Alvin's route). This morning I made a CRACKLIN'S OMELETTE! While I've already made some notes for " next time " it was fabulous. Here's how I did it. First I browned a heaping teaspoon of finely-chopped Music garlic (from Jerry Ford) with Winona Pig lard in the skillet. Then I chopped about 1/2 cup of cracklin's into tiny bits and mixed them into 3 (Otis Family) eggs. Once the garlic was brown, I tossed the egg-cracklin' mixture into the skillet and began the process. The innards could be whatever you want, I used chopped green olives, horseradish cheese (from Local D'Lish), shredded Parmasan cheese, ground Tellicherry Pepper (from Zingerman's Deli) and (Sel Gris) seasalt. The only thing I would change next time.... I chopped the cracklin's frozen and cold and added them in that manner, next time I'll throw them into the hot skillet first to make them more crispy, then add the garlic to that mix (garlic on the outside of an omelette will get too burnt). So, help us out here. Becca and I are working on a LIVER PATE that will include cracklin's and lard, and we are working on a CRACKLIN'S NUGGET that could be eaten with a good wasabi or spicy dip. We could also make the cracklin's into a CRUNCHY CRACKER CHIP too. These are recipes to be explored.
