I have been avoiding grains, but wanted to work a little bit back in, and my

husband avoids dairy, so I have been making this as a sort of 'dessertish'

thing, but my gallbladder started acting up, so I have been eating it for lunch

for a few days:

Cook up some white rice, or a mix of rice and barley (I use my rice cooker)

Put rice in a bowl, add full fat coconut milk to make a sort of pudding mix.

Add some golden raisins, and some chopped up soaked nuts - I use walnuts.

Add dash of sea salt, some vanilla, some touch of sweetener if you want, either

maple syrup, cane sugar, or stevia.

It stores in fridge really well.

It seems pretty easy to digest, and tastes good enough to encourage eating.

I have the same issues with my 94 year old mother. In general, it makes no sense

whatsoever to " rock the boat' with their devitalized digestive system,

especially since you only have a couple of days. The last thing you want is to

have her " sick " from a diet that is more rich, more fibrous or more spicy than

the current diet she is accustomed to. Most people of that age can't taste very

well anyway, so that helps explain the diminished appetite. Many times when you

ask them what they want, they don't want to be a bother, or, they " forget " that

they can't eat what they used to eat.

They do like tiny and frequent meals in general and cannot, as you say, digest

a hearty meal. Stick with soups, roast beef, stewed chicken, mashed potatoes,

sweet potatoes, oatmeal, pasta and, in general, well-cooked meals. When you

think about it, ice cream isn't all that bad for them, especially with some

fruit and ground nuts.
