I assume you render it just like pork lard but I am not sure since I didn't shoot the bear! If I had a chance to get the lard I would render it down. I also remember years ago my uncle shot a bear in Alaska and made some bear sausage that was super good! If Desmond who is on this list is reading he could tell you how to do it as well as making other " weird " things. He and his wife will be over tonight and I will remind him to check it out.
