I didn't see any mold. Just smells fermented.

Mine molded shortly after I brought it home. I was bummed. was

crying--none for his pancakes.

Never thought of it fermenting tho.

You can tap a maple tree around 30 to 40 yrs of age. They can continue to

by sapped (tapped) until they are over a 100 yrs old.

I have boiled my maple until slightly drippy (boil it down.) When the

fermenting aka alcohol burns away, taste to test.

If not up-to-par for pancakes, you can use it for brownies or some sweet

treat of your liking.

I have used this method in a bind finding my real maple syrup tucked in the

back of the fridge not smelling the best but craving pancakes.

I have NEVER had my syrup mold but this is the word on the street on maple

syrup and mold in the maple syrup world.........

Maple Syrup Mold:

Occasionally, over time, a mold will appear on the surface of the syrup.

This mold is a falsur mold and is seen often in maple syrups of all

qualities and colors. It is not toxic to humans just unpleasant to the eye.

To remove the mold, just follow these instructions to restore your syrup to

its original state:

a. Skim off the top surface of the syrup where the mold has formed and

dispose of it.

b. Then pour the syrup into a heat resistant container.

c. Heat the syrup to the boiling point.

d. Cool slightly and once again, skim the surface of the syrup.

e. Wash the original container in very hot sudsy water and rinse.

f. Refill the container with the hot syrup. Cool and refrigerate.

Your syrup will once again be restored to its original quality. You may

repeat this procedure as often as needed. This will allow you to enjoy your

syrup repeatedly!
