we put down a plastic table cloth and put the naked baby in the middle. Everyone

peeled bananas and put them in a big pile around the baby.

Baby banana cake!! She loved it and so did all the big kids.

I made a GF coconut flour cake for everyone else.

For my son's first bday we made the cheesecake recipe in Nourishing Traditions

(and made it into cupcakes) and homemade vanilla ice cream. For my daughter's

first I made coconut flour cupcakes with cream cheese " frosting " (cream cheese,

butter and a touch of honey). Here's a good recipe for the cupcakes. Even the

frosting looks pretty good:

I have had my family on raw foods for 13 ½ years. Here’s what we do for

birthdays.

And I am happy to send recipes and photos if you email me off list.

Ice cream pies-all kinds including neopolitan ice cream pie with a chocolate

nut crust.

Cheesecakes-any variety you can think of

Chocolate banana cream cake using coconut pulp and ground nuts to make the

cake dough.

Everyone LOVES MY DESSERTS AND SO I CAN EASILY SERVE THESE FOR BIRTHDAYS

EVEN TO THOSE WHO DON’T EAT AS WELL AS WE DO. AND I AM SO RELIEVED TO KNOW

I DO NOT HAVE TO POISON MY CHILDREN WHEN WE ARE CELEBTRATING THEIR LIFE.

The above link takes you to one of my favorite coconut flour cake recipes. I

tweaked this recipe like crazy trying to get the right results. This one is for

chocolate cake and is sweetened with honey. It's almost identical to a standard

cake in texture. Light and fluffy, just not as tall because it bakes better in

thinner layers! I used honey for the sweetener which you could reduce, but the

cake overall isn't crazy sweet, especially since we never serve it with

frosting. Instead we do a very lightly sweetened homemade whip cream and a

dusting of cocoa powder.
