I'm very excited to get some in the spring because I'm almost out from my bulk order last year. Yesterday, I put the last of my leftover ham in a baking dish. I cubed it and added onion, sweet pepper, cheese. Then smothered it with lovely orange yoke eggs and more cheese. Popped it in the oven at 350 until barely done. We had it for breakfast and everyone loved it so much that they brought slices to work for lunch. It's gone now, but they are asking for more. My son and his friends grilled the last of the brats last weekend when they camped in a tent in the woods. I have a bit of bacon left, but that will be gone by the time I get tomatoes for BLT's. I'm tickled to get spring pork. I'd be open to that. Simply do not have the $$ available to buy a whole box right now.
