Our cross bred Simmental herd is 100% grass-fed, no grain or growth hormones or growth stimulating anti-biotics. We do not use chemical fertilizers, herbicides or pesticides on our pastures or hay ground, however, we are not certified organic at this time. We attempt to apply holistic management principles whenever land management decisions are made and are working to maximize carbon sequestration in the soils through composting and grazing and to provide natural habitat for wildlife on the farm as well. Cost : The hanging weight per quarter on the available quarters is 189.25 pounds. I'm asking $2.35 per pound this year which would work out to $444.74 plus processing cost. Processing costs are in the $110 to $130 range depending on the specific cutting instructions. A quarter will be about 35% ground beef as a general rule, with steaks, roasts and other cuts making up the balance Depending on your cutting instructions, the packaged quarter will be about 60% of the hanging weight - about 113 pounds. The savings are significant if you can buy a quarter, compared for instance to the cost of grass-fed ground beef at the store Delivery is included in the metro area. Call or email for a cutting instruction sheet ... it communicates your specific choices to the butcher. I will need cutting instructions returned to me by Wednesday the 15th for the currently available quarters. Let me know if you have question.
