If KT is brewed 12-14 days like I do mine...there is little sugar content. Yes, it is more tart than most like theirs but I do a second brewing in the bottle and add stevia, ginger or vanilla flavoring to off set some of the tart. These also increase the fizz. I drink 2-4 bottles a day and my numbers are really good. The rest drink less and have good numbers. I have more problems with Kefir water where my sugar is concerned. So, I really drink a lot of KT. More than most I think. For the record, I have no scientific proof of this cause I rarely go to the doc but, since my morning numbers are lower, I actually think all the fermented things I started in Aug have made a difference. I actually wish I'd had an Ac1 test ran before and one could be ran now to see what that number is since it tells the tale over a 3 month period. I do know my mother-in-law has hers done every 3 months and hers has gone down and they have decreased her insulin. I just moved back to the extended metro area from Charlotte, NC -- we're just across into Wisconsin When we lived here 3 years ago I was JUST getting into traditional foods and in Charlotte there is a thriving yet small community where I learned a lot and really got my feet wet. Eating traditional is the exact opposite of how I grew up eating so I'm still learning though. I'm looking for high quality food as close to home as possible. And compared to Charlotte, that seems to be the biggest problem - in general, sources are MUCH farther here in the cities. Oh well. Biggest things I'm looking for help finding are free range EGGS (non GMO non soy) and pastured RAW MILK (or at least mostly pastured). In WI counties: Polk, Burnett, Barron, or St Croix or MN counties: Chisago, Anoka, or Washington. I checked the chart in the database but it didn't look like there was any raw milk near any of these counties... is this right? Is poplar hills goat milk raw or pasteurized?? Feel free to reply offlist Once I get my kefir grains multiplying again, I'll be able to share some!
