Guest guest Posted February 6, 2012 Report Share Posted February 6, 2012 just typed this out and e-mailed it to a friend who asked for it, so thought i'd post it here too... my kids really like these. they're very flexible and you could easily change them up to suit your tastes or what you happen to have on hand... Banana Oat Balls 3 bananas - very ripe, mashed 2 cups oats 1 cup chopped dates (dried) - sometimes i chop fine, sometimes i use processor (can use some raisins if you don't have enough dates) 1/4 cup oil - i use coconut or coconut-ghee, could use butter 1/2 tsp cinnamon 1/4 tsp salt 1/2 cup " mix-ins " such as mini choc chips, raisins, chopped nuts, etc mash bananas in bowl mix in rest of ingredients allow to sit for 10 minutes scoop spoonfuls onto parchment lined baking sheet (i make " balls " but could smash them a little to make them more cookie-ish bake at 350 deg (about 25 minutes, depends on size) cool and serve (tasty while they're still warm) they're great in lunch boxes etc, but when we have them at home we put bake them on a little piece of foil in the toaster oven for 4-5 minutes to make them a little warm. yum. hope you enjoy! julie Quote Link to comment Share on other sites More sharing options...
