Gene, this is awesome! Your kind of business is what ALL of us here want to

support. It's so refreshing to hear your mission! This week I have traveled over

1000 miles in WI (last time I checked... " The Dairy State " ) and I could not find

one restaurant or coffeehouse throughout my trip that had anything local,

organic or even edible! Most places had the little " coffee whitener " containers

made from soy and plastic! The farmers at Castle Rock will love it when they

see your message!! Welcome to our community!

Do you have meeting room space for some of our gatherings?

Thanks Wil.  I am currently using AutumnWood dairy but I think dairy is

something that should be at least organic (raw is obviously not an option) and I

also like the variety of product that Crystal Rock has.  I'm going to soon be

adding a dessert line with consisists of espresso topped with real vanilla

flavored whipped cream and a scoop of ice cream topped with a shot of esspresso

so I was excited to see that Crystal Rock makes ice cream.  Maybe you can put in

a good word for me Wil :)

 

In terms of other progress in going local, I have now directly sourced raw honey

from Ames farm in Watertown, MN.  We use it to flavor a lattee called a Miel. 

Just a couple of weeks ago I took first delivery of Real Maple Syrup from

Waletzko Maple Farm in North Branch, MN; and Kombucha from Nessala out of

Madison (I'm open to a more local option if someone has a recomendation).  I use

local roasterries (Dogwood and Roasterrie 7) that practice direct trade with

small, family based coffee growers.

 

Other plans include: elimating all flavoring syrups that contain refined sugars

and/or artificial ingredients and moving towards all real and raw flavoring

ingredients; this summer our patio will be surrounded by native plants that once

dominated the area; and moving the menu in a higher fat direction.  Skim is not

an option, whole milk is the default and we can make all milk drinks " Breve "

(meaning all cream and no milk).  Just imagine a cup of warm cream, a shot of

" third wave " sweet and tangy esspesso with a little raw honey or real maple

syrup.... :)

 

I'd also like to put my own pastured, organic, soy-free boiled eggs on the menu

but there is this little thing called the Health Department.... :(

I just realized that I never responded to your question about room availability

for gatherings. Sorry about that Wil. Yes, we have two nice conference rooms

that can be reserved, the larger one has full a/v equipment. We just ask for a

$25 minimum purchase for the smaller room (seats about 15) and $50 for the

larger room (seats up to 35, a/v equipment included). They are frequently booked

so you would want to plan ahead.

I would love to see the TFMN group have some meetings here!
