I'll post it here as well as under " files " for future reference. Glad you liked it! And I'm glad so many folks showed up in Gaylord, MN yesterday to support Mike and Diane. Judy Beetroot Salad with Onion and Horseradish Beetroot is nutritious and energizing, rich in potassium, silica, iron, amino acids and vitamins A, B and C. It is ideal as a blood tonic in anemia and is traditionally used in debilitating diseases and convalescence. It is neutral with a sweet taste and acts as a tonic for Qi, blood and yin. Horseradish is stimulating, pungent, sweet and hot to energize yang and clear damp and phlegm. It clears food stagnation and phlegm-heat from the lungs. Onion, like garlic, is a good anti-bacterial. This salad makes an energizing lunch or starter which is also idea during colds, flu and convalescent. Serves 3 -4 10 oz cooked beetroot 1 T horseradish 1 onion, finely chopped 2-3 T olive oil 1-2 T wine or cider vinegar salt and black pepper 2 T chopped fresh parsley, to garnish Grate the peeled beetroot into a bowl and mix with the grated fresh horseradish and onion. To make the dressing, combine the olive oil, vinegar and salt and pepper and mix well. Pour the dressing over the beetroot mixture and toss to mix. Garnish with the chopped parsley. Serve with crisp French bread for a light lunch or starter.
