Ive used whipped cream as frosting plenty of times and it is delicious. I

sweeten with maple syrup and add a little bit of cream of tartar to stiffen it

up. A non sugar sweetened jam is lovely on the inside layer too.

Last option if you have lots of time some evening to stir:

Homemade condensed milk sweetened with honey instead of sugar. I have only done

this starting with milm once. Start with a gallon of milk and boil down to

condensed milk. ( it does take hours of frequent or occasional stirring on a

lowish heat) but it was so yummy and i loved it with honey better than sugar. I

sure wish we could get a " connerical " nutrient rich condensed milk that is either

unsweetened or honey sweetened as a base.

In brazil, cakes are always frosted with condensed milk boiled down into a " de

leite " or caramel. Usually you buy it already to go with cholocate mixed i or

at least start at condensed milk stage. Once it is at condensed milk stage, mix

in a half stick butter and tablespoon or two of chocolate and stir constantly

til candy/ caramel stage. If you dont want chocolate, use can of coconut milk

instead. This takes a little longer to boil down. But it is delicious.

Then cool and spread on cake by inserting knife in hot water to soften and

spread. In brazil, you then cover with chocolate sprinkles or desecated

coconut. Its a yummy very sweet cake even with the honey version.
