I don't know, but the three criteria you mention seems correct to

me. Additionally, the proportion of grain to protein, fat and other

complex carbohydrates should change for most of us. We have become

huge grain eaters says I who produce crackers commercially... Whole

Grain Milling (Welcome Minnesota) has some beautiful rye berries and

also rye flour, but I have only purchased the berries.
